Jeramie Posted July 29, 2010 Report Share Posted July 29, 2010 A problem every year for gardeners is missing a squash or Zucchini under a leaf. Two days later you could beat a horse to death with it. My mom started doing this back when I was a kid and it caught on. Cut the zucchini in half along the length and scoop out the center leaving the outside just thick enough to support itself. Put together your best Meatloaf Recipee and stuff the zucchini halves. Bake in the oven like you would normally bake a meat loaf. Serve from inside the Zucchini.
