I noticed you typed ryegrass. while ryegrass can be palatable early I have found it gets very little browsing after it is a month old. Rye grain is a different story though. It stays very palatable all winter. It also has a longer growing period than wheat as it is a little more winter tolerant than wheat. We're going to plant our smaller plots the weekend before 10/1 and wait until after mid October to plant the rest. Don't want to risk all our food plot budget $ all at once.
