Snipe Posted September 4, 2010 Report Share Posted September 4, 2010 We call them Texas June Bugs.. De-bone the breast meat by running your thumbnail under the meat pushing it off the bone.. Be careful not to tear the meat.. Then take a 1/2" wide 2" long slice of jalapeno pepper and onion for each breast.. Season each breast with your favorite seasoning.. Montreal Steak Seasoning works great.. Place the pepper and onion between the breast meat.. Close and wrap with bacon, skewer with a tooth pick... Grill each of the dove breast till the bacon crisps up a bit.. Moving them around on the grill to cook evenly. The breasts should start to ball up a bit looking like a June bug... Oh yeah... am I the only one in here that used to fly june bugs on the end of a piece of thread as a kid? Life was simpler in those days. layin on the smackdown Posted September 9, 2010 Report Share Posted September 9, 2010 Dang dude, i just made a post about the best recipe ever to cook doves with.... http://www.realtree.com/forums/showthread.php?t=101087 If you aren't wanting to fry them, breast them out boneless, put a water chestnut in the middle of one breast chunk, wrap a half a piece of bacon around it, jam a tooth pic in it to hold it together and throw er on the grill... thats the second best recipe for doves.... doubleA Posted September 10, 2010 Report Share Posted September 10, 2010 I like to take a whole breast,make 2 cuts and insert jalapeno pepper in them ,season to taste, wrap with a piece of bacon and grill over a nice mesquite fire for 8-10 minutes.
