Try this: Get you a few fingerling reds or yukons, clean them real goood, boil them with the skin on, take them out and press them flat (I use a plate), then deep fry them in a 1/4" of oil, turn them once. Stick a sprig of rosemary and sage in the oil while frying. Take about 1/4 of one garlic clove mince it real good and mix that in with 2 tablespoons of mayo. The red ones are the best bakers imho. Only tater I don't like is a rotten one.... ewwwwwww! Fingerlings (which are hard to find, so just use the little new reds), ones about the size of a silver dollar maybe 7 or 8 minutes. You'll know when you flatten them.
