Apparently you've never met any Cajuns. Possum chitlins, armadillo, muskrat, cranes, frogs (not just the legs), squirrel brains, fried cotton mouth all on the daily menu. But, here's one. 3 rats 10 garlic bulbs (yes, the whole thing) 2 gallons of water (may as well get it from the same pond as the rats) Slice up about 3 lbs of onions (stronger the better) About 10 of the cattail roots (yep, same pond...) Mix all together and throw in your favorite pair of old wore out hunting boots. Simmer until the leather from your boots is soft and somewhat cutable. Throw the rats away.
