I love to make a mess but am a little slack cleaning up. I'll get to it sometime! Anyone want to share a good recepie? Any tips? What have you? redkneck Posted November 11, 2010 Report Share Posted November 11, 2010 I don't have a great "made from scratch" recipe, I usually start with a chile seasoning mix from the store, then I fry ground deer, onions, garlic, etc, then add the seasoning, beans, tomatoes, and stuff. One thing I do add that adds texture and flavor is a can of drained golden hominy or two depending on how much you make. It's great in there. wtnhunt Posted November 11, 2010 Report Share Posted November 11, 2010 Honestly don't usually follow a recipe on chili Lynn, so many ways to make it that it is hard to make it wrong unless you accidentally dump too much of something(of course I have never done that). lol. I make it a few ways, either in a pot on the stove or in the crockpot. Easiest is in the crockpot. Can even brown the venison in the crockpot, add a little olive oil to your pot before starting. Brown 2 lbs of venison with onions and peppers(any kid you like will do, I usually use cayenne or jalapeno, and bells). If I have cloved garlic I also add it when it is browning. After browned add garlic powder, omit if you used garlic cloves. Turn pot down to medium or low heat. Have used canned homemade salsa in the chili when I did not have any fresh onions or peppers. Add about a tablespoon of ground cumin. I use about 1.5 tablespoons of chili powder. Add tomato paste or sauce, usually 2 15 oz cans of sauce. Usually add maybe a tsp of sugar. I use bush's "hot chili beans", usually 2 cans of those and one can of kidney beans, or here the last year or so I have been following a tip given to us a while back from Leo and using one can of black beans. Last pot of chili I made was a couple weeks ago made with antelope, turned out great. Planning on making some again here real soon. Quote Link to comment Share on other sites More sharing options...

Grady269 Posted November 15, 2010 Report Share Posted November 15, 2010 2 lbs Venison Burger 2 lbs HOT Venison Sausage 3-4 Vidalia Onions 7 Jalepenio Peppers w seeds 7 Serano Peepers 2 bell peepers (2) 12 ounce cans dice tomatos with geen chiles 2 16oz cans diced tomatos plain (drainied) 3 cloves Garlic 2 Bottles of Budweiser pour in Spices: Garlic, Cayenne Pepper, Cumin, Cinnamon, Chili Powder Brown Veggies and meet add everything else to pot. Cook it 5-6 hours on low. I think Cinnamon is the secret ingredient to all Chili, don't use too much but it really adds a lot to it. Quote Link to comment Share on other sites More sharing options...
Randy Posted November 16, 2010 Report Share Posted November 16, 2010 Skeeter Killing Chili Here's my favorite. 3 lbs cubed sirloin or venison, cut in 1/2" cubes salt to taste 1 Tbs black pepper 1 lg onion, diced 3 cloves garlic, chopped 3 stalks celery, chopped 1 can beer 1 qt spicy vegetable juice 3 Tbs red chili powder 1 Tbs cayenne pepper 1 Tbs dried basil 3 Tbs cilantro 1 tsp fresh ground black pepper 1 12 oz can tomato soup 1 4 oz can chopped jalapeños 2 16 oz cans diced tomatoes with jalapeños 1 16 oz can red kidney beans 1 42 oz can spicy hot chili beans Garnish chopped onion shredded cheddar cheese sour cream sliced black olives corn chips Quote Link to comment Share on other sites More sharing options...
