I keep the seasoning simple. Salt, coarse black pepper, garlic powder and cure.

Use mesquite and/or oak wood in a smoke house. I'll smoke it for 6-8 hours and it will usually dry in a day depending on the thickness . You only want to remove(evaporate) the water from the meat and not cook it. I would venture to say that my temps dont get over 100 degrees. The use natural smoke it what sets it apart from others.

Below is turkey but I do the same with venison or beef. Hope this helps some....

yea I use ground venison out of a gun and put it in the dehydrator. i use regular curing salt and what not with some other pinch/dry rubs that i've got. i also mix in a BBQ sauce and brown sugar, which is the "secret ingredients". lol nothing fancy. the bbq sauce and sugar help keep things together. if you try to use normal liquid type marinade that way it'll not have the same flavor and seem dried out too much. it's definitely the way to go though if you're using cut strips.
