Couple weeks back the Mrs. had some extra hot sausage in need of using up. Her former boss has a buddy......a Greek fellow who owns a pizza shop........... who'd bring lunch to their office every Wednesday. He made killer hot sausage soup!!! Here's what I came up with. I gotta say......... I came pretty close to nailing it. Hot Sausage Soup 1 ½ lbs hot sausage (either loose or chunked links) 1 large onion sliced 4 cloves garlic (pressed) 3-4 Tsp Olive oil 32 oz. chicken broth 28 oz. can diced tomatoes 2 stalks celery diced 1 carrot diced 2 C. elbow macaroni 2 tsp salt 1 tsp oregano 1 tsp basil 1 tsp black pepper 1 tsp crushed red pepper 1/ tsp thyme Brown sausage with onion and garlic with olive oil in large pot. Add chicken broth, tomatoes and all other ingredients. Bring to boil then reduce heat and simmer. Crushed red pepper can be increased or decreased to taste.
