I bought a Knight about 7-8 years ago. At that time Knight was the leader in the industry. I like my Knight, however, I would seriously consider other brands TODAY.
Stainless steel as Stan suggested. A lot easier to clean and maintain.
Plastic stock. No need for wood as it just gets scrathed.
Mine has a "thumbhole grip" and I love it. I would seriously consider handling one of this type to see how it feels.
I would, these days, consider a muzzleloader that has "interchangable" barrels. My old Knight only has one barrel, therefore, is only good for one week of the year. I believe that the "ENCORE" line has these options.
Last, I have seen the muzzleloaders that "break" and then lock with the primer concealed. I really like that idea of keeping the prime safe and dry. No special capper needed to prime your gun.
Make sure the breach plug comes out so that you can clean it from both ends. I believe that all new muzzleloaders are like this.
