I normally don't eat the heart or liver, but I did have some pickled deer heart once and it was pretty good - very tender. I just don't know how to prepare it myself. Since so many of you have said you want to try heart but don't know how to prepare it I will give a simple recipe... My father-in-law taught me to cut the atriums off and throw them away(the top, smaller cavities) Then take the ventricles and slice them real thin...then season with a little garlic and onion powder and drop them in a hot skillet with a little butter and fry them till they are tender, doesn’t take long just sear on each side and then let simmer in the butter just a couple minutes then serve and eat fast before they cool too much. Along the backbone, from about even with the rib cage to the tail end.
