OJR Posted July 30, 2007 Report Share Posted July 30, 2007 My son and his family came up from Boise and our other son and his family were all here for dinner on Saturday night! My wife made 7 pounds of Swedish meatballs and we all pigged out! Nobody complained at all! It was a great weekend, but man, I am not used to having all those kids around at the same time! It started on Thursday and Friday when I went to register for my freshman classes this fall, one of my classes is I get to study the history of Rock and Roll! How sweet is that! Then on Saturday I went to a minor league baseball game with my parents, sister, nieces and nephews, my 1 year old nephew's first baseball game. buckee Posted July 30, 2007 Report Share Posted July 30, 2007 My first wife was Danish, and her Mom (Greta) used to make these greenish coloured Danish meatballs. They were awesome. It was the spices she used that turned them green, I guess. She also makes the best Danish Pastry ever eaten by man IMO. They are quite small in size and you eat them with potatoes, gravy (if you want), vegetables, salad, etc. They are the main meat dish and I will post the recipe later. Our youngest son must have eaten 25 of the things! His plate was just heaped! LOL!! My wife and I finished what was left last night for dinner! Finally had one good nights sleep last night!
