OJR Posted March 12, 2008 Report Share Posted March 12, 2008 SWISS STEAK Ideal slow cooker size: 4 quart 3-4 Tbsp. flour 1/2 tsp. salt* 1/4 tsp. pepper 1 1/2 tsp. dry mustard 1 1/2-2 lbs. round steak, trimmed of fat 1 Tbsp. canola or olive oil 1 cup sliced onions 1 lb. carrots, sliced 14 1/2 oz. can diced tomatoes 1 Tbsp. brown sugar* 1 1/2 Tbsp. Worcestershire sauce 1. Combine flour, salt, pepper and dry mustard. 2. Cut steak in serving pieces. Dredge in flour mixture. Brown on both sides in oil in saucepan. Place in slow cooker. 3. Add onions and carrots. 4. Combine tomatoes, brown sugar, and Worcestershire sauce. Pour into slow cooker. 5. Cover. Cook on Low 8-10 hours, or High 3-5 hours. * You can use salt and brown sugar substitute. Low in cholesterol & carbohydrate. Lower if you use venison or buffalo.
