Anyone butcher their game themselves?

I do. Saves alot of money and I know what I am getting. Twice I brought my deer to the butcher and did not get all of my meat. Kinda hard not to notice the tenderloins were missing. Losers. Cutting deer is not hard, and all you need are two filet knives, a sharpener and a hack saw to do it.

Hunting "Out of State" early in the trip I get them processed so their frozen for the return trip. Later towards the end they get quartered then brought back in coolers and processed at home.

Everything else gets processed at home with the exception of having summer sausage made by a chef friend of mine.
