When we started hunting we used a butcher and it started out at $60 for a regular cut, and then it kept going up every year until it got ridiculous at $90. That's the same year we went out and bought all the stuff to do it ourselves. Kind of a pain to do it yourself but it is more rewarding knowing that you got your own deer (the place we used to go to just gave you the meat you paid for, didn't matter what deer it came from), and that you did it all yourself. We haven't used a butcher since. We just hang them up in the garage and have at it, gets a little messy but it all just hoses right out.
